Ramp up the favours of your homemade US diner-style burger with a few canny British additions.
500g minced beef
4 spring onions, finely chopped
2 cloves garlic, crushed
2 tsp oregano or dried mixed herbs
1 tbsp Worcestershire sauce
1 tsp English mustard
100g Cheddar cheese, grated
Vegetable oil, for brushing
4 x ½cm-thick slices of Cheddar cheese
4 burger buns, halved across the middle
1) Mix together the first seven ingredients, seasoning with salt and freshly ground black pepper, then shape the mixture into four equally sized burgers. Transfer to the fridge for a while to firm up.
2) To cook, brush each burger with a little oil and transfer to the BBQ. Cook on one side for 3 or 4 minutes until good and charred, then ‑ flip over. Place a slice of cheese on top of each burger and continue cooking for another 2-3 minutes, until the burger has cooked and the cheese had started to melt. (Alternatively, cook on the hob in a hot griddle pan for the same length of time.) Meanwhile, place each of the bun halves on the grill for a minute or two to toast.
3) Place one burger in each bun and assemble how you like it – with tomato ketchup, BBQ sauce, slices of tomato, strips of gherkin...the choice is yours!
