This simple, light, thirst-quenching Mexican drink is the perfect way to cool down on a hot day!
2 medium cucumbers
120g caster sugar
180ml lime juice (about 6 limes)
100g ice cubes
1) Cut both cucumbers in half, lengthwise, then use a teaspoon to scoop out the seeds from each half. Discard the seeds, chop the cucumbers into rough chunks and transfer to a blender, along with the other ingredients and a pinch of salt.
2) Blitz until the sugar is dissolved and the mixture is smooth and slushy – about 1 minute. Add a few more ice cubes to four tall glasses and divide the drink between them.
