If you only make one drink this summer, it has to be this, the ultimate thirst-quencher!
6 unwaxed lemons, juice and zest
250g caster sugar
2 x 1-litre bottles of sparkling water, to serve
1) Grate the zest from lemons into a medium saucepan and add the sugar and water. Bring to the boil, then simmer for 5 minutes. Remove from the heat and leave to cool.
2) Pass the mixture through a sieve to remove the grated zest, then add the juice from the lemons. Transfer to the fridge until needed.
3) When you’re ready to enjoy, combine one part of syrup with three parts of sparkling water over ice, garnishing with fresh mint leaves and strawberries, if you wish.
