Lentils are low in calories but high in nutrients and their nutty fl avour makes for a perfect marriage with sausages.


Olive oil – 2 tbsp
Sausages – 8
Onion – 1 chopped
Carrot 1 sliced
Garlic clove – 1 crushed
Red pepper – 1 cut into chunks
Puy lentils – 250g
Vegetable stock – 150ml
Red wine – 125ml


1) Heat 1 tablespoon of oil and brown the sausages in a frying pan then set them to one side.

2) Add the remainder of the oil and cook the onion, carrots, garlic and pepper for 5 minutes or until softened.

3) Add the lentils with the stock and wine and return the sausages to the pan.

4) Simmer for 20 minutes or until the lentils are soft.
