No need to bake or cook a custard for this sweet treat.
180 – 200g family sized ready to fill sweet crust pie base
400g strawberries, stalks removed and quartered
150ml double cream, whipped
350g mascarpone
1 tablespoon icing sugar
1 teaspoon vanilla extract
1) Mix the mascarpone, vanilla extract and icing sugar together before folding in the whipped double cream.
2) Spoon the creamy mixture into the pie base.
3) Add a layer of the sliced strawberries.
