This strawberry-infused gin recipe is a delicious summer twist on your favourite tipple and the perfect accompaniment to a barbecue. Pour over ice and top up with tonic or add a splash to chilled sparkling white wine with a halved strawberry for a quick cocktail.
150g caster sugar
700ml bottle gin
1) Wash, hull and quarter the strawberries then very roughly crush them with a fork or potato masher.
2) Spoon into a wide necked glass bottle or storage jar with the sugar and gin, close the lid and give it a good shake to start dissolving the sugar.
3) Leave to steep for 2–3 days, shaking each day.
4) Strain through a muslin cloth, then decant the gin into a bottle. Best enjoyed within 1 month of making
