This simple gin cooler is stylish, refreshing and the perfect summer drink.
200g fresh blueberries
75g sugar
160ml gin
Juice of 2 limes
Lemonade to top
1) Start by making a blueberry syrup. Add the blueberries and the sugar to a pan, along with 20ml water. Bring to the boil, then reduce the heat and simmer for 5 minutes, mashing the blueberries against the side of the pan with a wooden spoon as you go. Strain the mixture, discarding the solids, then set aside the syrup to cool.
2) In a jug, stir together the blueberry syrup, gin and lime juice. Add 4 or 5 ice cubes to each of 4 lowball glasses. Divide the blueberry-gin mixture between them and top with lemonade, garnishing with mint sprigs if desired. Add a straw to each (which also helps with stirring) and serve.
