Chinese Poached Chicken With Ginger

A simple Chinese recipe of poached chicken served with green veg and spicy seasonings.

Ingredients

4 chicken breasts

4 spring onions, both green and white parts, finely chopped

2 tbsp finely grated ginger

4 tbsp vegetable oil

200g long-grain rice, washed in a sieve under running water to remove the starch

Method

1) Bring a pan of salted water to the boil, then lower in the chicken. Return to the boil, then turn off the heat, jam on a lid, and leave the chicken to poach for 30 minutes while you make the sauce.

2) In a bowl, mix the spring onion, ginger and oil. Add a little salt and black pepper and set aside.

3) Add the rice to a pan (for which you have a lid), along with 2½ times its volume of water and some salt. Bring to the boil, then stir, place a tea towel over the top of the pan and carefully jam on the lid (the towel sucks up the moisture, giving you fluffy rice). Cook on the lowest heat for 8 minutes, then remove from the heat and stand for 10 minutes.

4) Place the chicken breasts on a board and cut each into slices. Divide the rice between 4 bowls, top with chicken slices, and drizzle over the sauce. Add some freshly cooked green veg – broccoli is ideal – and serve, alongside soy and chilli sauces.
